You ever have those times when you need to whip up something edible fast? So you just dive head first into a recipe, only to realize half way through that you are missing one ingredient, fun right? Well not really, and often in baking when you come across those mistakes or missing ingredients you cant fix it, try anyway. Besides you never know, maybe it will be the best thing you ever made, maybe a lump of brick, only one way to find out. Anyway, somehow I salvage the recipe, and made it into a coffee cake instead. It turned out so well that I figured I would share it here. Enjoy!
2 cups of Flour
1 tsp Baking Powder
1/2 tsp Salt
1/4 tsp baking soda
cinnamon (I used about 4tbs maybe more, but I love cinnamon)
1/2 softened butter
1 cup sugar
2 eggs
1/2 tsp vanilla
1/4 - 1/2 cup oil*
1/2 cup - 1 cup milk*
dried cranberries (optional or substitutable)
walnuts (optional or substitutable)
Streusel Topping (optional)
Combine first five ingredients and blend thoroughly. Next add butter until mixed thoroughly, then add sugar, vanilla, eggs. By now the mix should be thick and lumpy, sticking to the mixer. Add oil until the mix begins to loosen, thin out and no longer sticks to the mixer. Dough will be lumpy, but somewhat spreadable, next add milk until the mix is liquidy and can be poured easily. (*I didn’t measure the oil and milk I added, so the measurements are just guesstimates*) I added milk until the mixture resembled a cake batter. Then I dumped in the dried cranberries and the walnuts, I went a bit heavy but add only as much as you would like, or don’t add anything this recipe is good even without the nuts and berries. For the streusel topping mix brown sugar, flour and shortening until it resembles a coarse crumb mixture, sprinkle ontop of cake. Bake @400* for 30-40 minutes, or untill a toothpick comes out of the cake clean.
