Ok I know long over do, the last few weeks have been crazy, I apologize.
Thanksgiving came out so well, I haven’t cooked a full thanksgiving in about 10 years. I was very proud of myself. My mom was here and she helped out a lot, she’s a very good cook herself.
we had turkey of course, and mashed potatoes, stuffing, green bean casserole, corn bread pudding, cranberry jelly. super traditional, and very yummy!!!
I have been trying to decide what recipe to post. it was all so yummy, I think I will do the stuffing and green beans. since I didn’t do the traditional cream of mushroom soup thing with the green beans. I actually usued the sauce from the turkey tetrazinni (reduced of course since the green beans require less, I would at least halve it) that I have posted previously (http://dogdaysoflunches.tumblr.com/post/1549360128/turkey-tetrizzini), mixed frozen but thawed (not from a can) green beans in with that, topped it with fried onions and seasoned bread crumbs mixed with melted butter and baked them at 350 for 1/2 an hour, holy yum. (this is obviously not the easiest recipe to follow, but for space it’s just an idea, I will post the actual recipe later)
the stuffing is easy but worth it, I have actually been thinking that I am going to use this recipe and stuff chicken breasts with it some night for dinner
so a box of seasoned bread cubes specifically for stuffing,
enough butter to coat all of them (1/2-1 stick)
2 cups chicken broth (I used bullion and water as always)
1/2 a large onion or a whole small onion chopped small
3 stocks of celery chopped
one large red apple peeled and chopped
3-4 handfuls of craisins
in a big stock pot melt butter, add celery, & onions, cook onions until clear and tender
add apple and craisins and stir to combine. add bread and stir to combine again, the butter (I would start out with 4 TBSP of butter so you can add as you need it) should cover almost all of the bread while stirring, if it doesn’t add more butter. now add the stock and mix until all bread is coated with the liquid. once it is well combined (I would taste it before you put this in the oven and see if it needs salt or pepper) cook at 350 for about 30 minutes. enjoy :)
